Do I need a maths or data science degree to become an AI engineer?

No - for AI engineering (building on LLMs), you need solid software fundamentals plus the LLM-specific stack: prompting, tool use, embeddings/RAG and evals. Training models from scratch is a different career (ML research/engineering) where the maths matters. Don't let linear algebra gatekeep you out of a role that doesn't require it.

Can AI engineering be a first developer job?

Occasionally, but it's usually reached 1-2 years into a frontend or backend career - the role is software engineering first.
