DBA vs data engineer - which is this?

DBA/database engineer work centres on operating the database itself (performance, availability, integrity); data engineers move data between systems. This roadmap is the former - and it makes you a better backend or data engineer even if you land there instead.

How do I practise production skills without production?

Load a real multi-GB public dataset locally, then practise deliberately: break queries and fix them with EXPLAIN, take backups and restore them, simulate failover with replication. Write each drill up - those are your interview stories.
